Tangy carrot, cabbage & onion salad

Ingredients

  • Carrots 4 sliced
  • Red Cabbage 1/2
  • Red Onions 2 sliced
  • Mint Handful
  • Coriander Leaves Handful
  • Roasted Peanut Handful
  • Lime Juice of 2
  • Ground Nut Oil 1 tablespoon
  • Red Chilli 1 chopped
  • Brown Sugar 1 tablespoon

Instructions

Tip the carrots, cabbage and onions into a bowl. Make the dressing by stirring the ingredients together until the sugar has dissolved. Pour over salad, tossing the vegetables in the dressing. Add the herbs, toss again, then scatter over the peanuts.
